Tonight I made skillet lasagna, I made it because I didn't have time to make regular lasagna and it is still delious and its a one pot meal. 

SKILLET LASAGNA

1 LB. ground beef
1 small onion, chopped
1 clove minced garlic
1 1/2 C. diced tomatoes, undrained
1 1/4 C. water
1 (8oz. can) tomato sauce
1 Tbl. parsley flakes
1 tsp. basil
1 tsp. oregano
1 tsp. salt
2 1/2 C. bowtie pasta, uncooked
1/4 C. parmeasan cheese
shredded mozzerella cheese
1 C. cottage cheese

DIRECTIONS
In a large skillet, brown beef with onions and garlic, drain.  Add tomatos, water, tomato sauce, parsley, basil, oregano, and salt.  Mix well.  Stir in uncooked pasta.  Bring to a boil, stirring occasionally.  reduce heat; cover and simmer for 20 mins or until pasta is tender, stirring once.  Sprinkle in basil and pepper to taste.  drop cheese mixture (cottage cheese and parmesan) by rounded tablespoon onto pasta mixture.  Cover and cook for 5 mins.  Sprinkle with shredded cheese, cover for a few mins for cheese to melt.

Hope you enjoy, my kids all love it, and my oldest likes it better than regular lasagna.

Sorry been slacking a little bit, so I'm going to try and catch up on this week.  Tonight we Salisbury Steak w/Mushroom Sauce.

SALISBURY STEAK W/ MUSHROOM SAUCE

1 LB. ground beef
1 tsp. salt
1/4 tsp. pepper
1 (4 oz) can sliced mushrooms, drained(reserve liquid)
2 Tbl. Flour
2 Tsp. beef boullion granules
1 egg
1/2 C. bread crumbs

Mix meat, salt, pepper, egg, and bread crumbs, shape meat mixture into hamburger patties.  Coat patties in flour, and put in hot skillet with 1 Tbl. oil.  Cook 8-10 mins.  Take out patties leaving any grease remaining in pan and add mushrooms and cook till light brown.  Stir in four, cook over low heat stirring until mixture is bubbly.  Remove heat and add enought water to reserved liquid to make 1 cup of liquid.  Stir liquid and boullion into flour mixture.  Heat to boiling stirring constantly.  Boil and stir mixture for 1 min.  Then pour over meat.

Tonights dinner consisted of homemade Mac n Cheese and for an added twisted I made it primavera it was good and the kids picked out all the vegetables out of the bowl and ate them all so now all thats left for leftovers is Mac n Cheese w/o vegetables.

Macaroni and Cheese Primavera
1 lb. extra large elbow macaroni noodles
1 lb. velvetta cheese
1 package frozen california medley vegetables
1/2 C. milk
2 Tbl Butter or margarine
2-3 Tbl salt
salt and pepper to taste

In a stock pot boil water add 2-3 Tbl salt to water to season pasta water.  Once water is boiling add pasta and cook til al dente (slight bite to pasta left).  Drain pasta once drained add back into pot and add milk, butter, cheese, and vegetables.  Cook over med. low heat stirring often.  Once all cheese is melted season with salt and pepper.  If you want an even richer, creamier you can use evaporated milk instead of regular milk.

Well tonight for dinner we had chinese stir fry for dinner.  I had some pork steaks and stir fry vegetables and we decided on rice tonight instead of Lo Mein noodles.  It was good.

Pork Stir fry

2 pork steaks cubed
1 package stir fry vegetables
2 Tbl. wok oil
2 C. cooked rice
1 bottle fav stir fry sauce (I use House of Tsang Classic Stir Fry Sauce)

Heat up wok oil into wok or skillet on high until pan is very hot.  Once hot add cubed up pork.  After pork is browned up add stir fry vegetables and cover for 5 minutes or so.  Then uncover and add stir fry sauce and stir until combined and heat over med low heat.

Enjoy you may save leftover rice for fried rice which is made best with left over rice.

Well its another day and another dinner to make.  Tonight I'm making Savory Oven Stew.  Actually I am making it now since it takes 5 hours to cook in the oven and its a no peek stew, so once its made you cover it and don't touch it for 5 hours and  it is so YUMMY especially on a cold winter night.

Savory Oven Stew
1 lb. stew meat
1 1/2 C. tomato or vegetable juice
3 Tbl. minute tapioca
2 Tbl. soy sauce
2 tsp. salt
1 tsp. accent
1 bay leaf
4 potatoes cut in chunks
2 onions cut in chunks
1 small bag of baby carrots, or 3 carrots cut up in chunks
2 stalks celery cut up

Preheat oven to 250 degrees.  Add stew meat and vegetable in a 9x13 pan.  In a seperate bowl add tomato juice and remaining ingredients.  Mix all together and pour over meat and vegetables.  Cover with aluminum foil and place in oven for 5 hours.  DO NOT PEEK OR STIR!!

Enjoy your dinner.  Goes great with rolls with the gravy from the stew.

Well last nights dinner was awesome, only problem is there are never any leftovers when I make it.  I made BBQ Chicken thighs and scalloped potatoes and had a side of peas that now that I think of it, I didn't get any peas, my kids ate them all before I even got any (well except Brady, she says they are nasty ever since my neice said she didn't like them lol).

BBQ CHICKEN
Chicken thighs (make as many as you need or want, I use 6-8)
Favorite BBQ sauce (I use Silver Dollar City BBQ Sauce)
Season with salt and pepper

Pour BBQ sauce over chicken thighs after you season the chicken.  Place in a 350 degree oven for 1 hour.  Chicken will be so tender and juicy by the time it is done. 

SCALLOPED POTATOES
  • 4 1/2 pounds red potatoes, cut into 1/4 inch slices
  • 1 (16 ounce) container Sour Cream
  • 3/4 pound VELVEETA 2% Milk Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
  • 1 onion chopped
  1. Heat oven to 350 degrees F. Slice potatoes in thin slices and cook potatoes in boiling water in large covered saucepan 10 to 12 minutes or just until potatoes are tender; drain. Remove 3/4 of the potatoes; place in large bowl. Add sour cream; stir until smooth. Stir in VELVEETA and onions. Add remaining potato slices; stir gently.
  2. Spoon into 13x9-inch baking dish sprayed with cooking spray
  3. Bake 30 minutes or until heated through. 
Enjoy your dinner and always try and eat at the kitchen table with your family, with the TV off and enjoy your family.

Well tonights dinner is my son Trevor's favorites.  He usually has at least 2 helpings of it.  I made beef stroganoff, and its very easy and a quick weeknight meal.  Also, I just got my newest simple and delicious magazine today so get to try out some new recipes soon. 

Beef Stroganoff

1 lb. ground beef
1 pkg. egg noodles
1 can cream of mushroom soup
1 can sliced mushrooms, can use fresh if you prefer
1 C. sour cream
1 tsp. paprika
1/8 tsp. pepper
1 onion, chopped
1 clove garlic, minced


Boil egg noodles while browning up ground beef with onions and garlic.  Once browned, drain grease, and add back into the skillet.  Add, cream of mushroom soup, mushrooms, and sour cream and stir to combine.  Let simmer until every thing is hot and is creamy.  Serve with rolls, vegetable, and a salad if you would like.
