Tonight I made skillet lasagna, I made it because I didn't have time to make regular lasagna and it is still delious and its a one pot meal. 

SKILLET LASAGNA

1 LB. ground beef
1 small onion, chopped
1 clove minced garlic
1 1/2 C. diced tomatoes, undrained
1 1/4 C. water
1 (8oz. can) tomato sauce
1 Tbl. parsley flakes
1 tsp. basil
1 tsp. oregano
1 tsp. salt
2 1/2 C. bowtie pasta, uncooked
1/4 C. parmeasan cheese
shredded mozzerella cheese
1 C. cottage cheese

DIRECTIONS
In a large skillet, brown beef with onions and garlic, drain.  Add tomatos, water, tomato sauce, parsley, basil, oregano, and salt.  Mix well.  Stir in uncooked pasta.  Bring to a boil, stirring occasionally.  reduce heat; cover and simmer for 20 mins or until pasta is tender, stirring once.  Sprinkle in basil and pepper to taste.  drop cheese mixture (cottage cheese and parmesan) by rounded tablespoon onto pasta mixture.  Cover and cook for 5 mins.  Sprinkle with shredded cheese, cover for a few mins for cheese to melt.

Hope you enjoy, my kids all love it, and my oldest likes it better than regular lasagna.

Sorry been slacking a little bit, so I'm going to try and catch up on this week.  Tonight we Salisbury Steak w/Mushroom Sauce.

SALISBURY STEAK W/ MUSHROOM SAUCE

1 LB. ground beef
1 tsp. salt
1/4 tsp. pepper
1 (4 oz) can sliced mushrooms, drained(reserve liquid)
2 Tbl. Flour
2 Tsp. beef boullion granules
1 egg
1/2 C. bread crumbs

Mix meat, salt, pepper, egg, and bread crumbs, shape meat mixture into hamburger patties.  Coat patties in flour, and put in hot skillet with 1 Tbl. oil.  Cook 8-10 mins.  Take out patties leaving any grease remaining in pan and add mushrooms and cook till light brown.  Stir in four, cook over low heat stirring until mixture is bubbly.  Remove heat and add enought water to reserved liquid to make 1 cup of liquid.  Stir liquid and boullion into flour mixture.  Heat to boiling stirring constantly.  Boil and stir mixture for 1 min.  Then pour over meat.
Hope you enjoy.  Serve with mashed potatoes or over egg noodles.

Tonights dinner consisted of homemade Mac n Cheese and for an added twisted I made it primavera it was good and the kids picked out all the vegetables out of the bowl and ate them all so now all thats left for leftovers is Mac n Cheese w/o vegetables.

Macaroni and Cheese Primavera
1 lb. extra large elbow macaroni noodles
1 lb. velvetta cheese
1 package frozen california medley vegetables
1/2 C. milk
2 Tbl Butter or margarine
2-3 Tbl salt
salt and pepper to taste

In a stock pot boil water add 2-3 Tbl salt to water to season pasta water.  Once water is boiling add pasta and cook til al dente (slight bite to pasta left).  Drain pasta once drained add back into pot and add milk, butter, cheese, and vegetables.  Cook over med. low heat stirring often.  Once all cheese is melted season with salt and pepper.  If you want an even richer, creamier you can use evaporated milk instead of regular milk.

Well tonight for dinner we had chinese stir fry for dinner.  I had some pork steaks and stir fry vegetables and we decided on rice tonight instead of Lo Mein noodles.  It was good.

Pork Stir fry

2 pork steaks cubed
1 package stir fry vegetables
2 Tbl. wok oil
2 C. cooked rice
1 bottle fav stir fry sauce (I use House of Tsang Classic Stir Fry Sauce)

Heat up wok oil into wok or skillet on high until pan is very hot.  Once hot add cubed up pork.  After pork is browned up add stir fry vegetables and cover for 5 minutes or so.  Then uncover and add stir fry sauce and stir until combined and heat over med low heat.

Enjoy you may save leftover rice for fried rice which is made best with left over rice.

Well its another day and another dinner to make.  Tonight I'm making Savory Oven Stew.  Actually I am making it now since it takes 5 hours to cook in the oven and its a no peek stew, so once its made you cover it and don't touch it for 5 hours and  it is so YUMMY especially on a cold winter night.

Savory Oven Stew
1 lb. stew meat
1 1/2 C. tomato or vegetable juice
3 Tbl. minute tapioca
2 Tbl. soy sauce
2 tsp. salt
1 tsp. accent
1 bay leaf
4 potatoes cut in chunks
2 onions cut in chunks
1 small bag of baby carrots, or 3 carrots cut up in chunks
2 stalks celery cut up

Preheat oven to 250 degrees.  Add stew meat and vegetable in a 9x13 pan.  In a seperate bowl add tomato juice and remaining ingredients.  Mix all together and pour over meat and vegetables.  Cover with aluminum foil and place in oven for 5 hours.  DO NOT PEEK OR STIR!!

Enjoy your dinner.  Goes great with rolls with the gravy from the stew.

Well last nights dinner was awesome, only problem is there are never any leftovers when I make it.  I made BBQ Chicken thighs and scalloped potatoes and had a side of peas that now that I think of it, I didn't get any peas, my kids ate them all before I even got any (well except Brady, she says they are nasty ever since my neice said she didn't like them lol).

BBQ CHICKEN
Chicken thighs (make as many as you need or want, I use 6-8)
Favorite BBQ sauce (I use Silver Dollar City BBQ Sauce)
Season with salt and pepper

Pour BBQ sauce over chicken thighs after you season the chicken.  Place in a 350 degree oven for 1 hour.  Chicken will be so tender and juicy by the time it is done. 

SCALLOPED POTATOES
  • 4 1/2 pounds red potatoes, cut into 1/4 inch slices
  • 1 (16 ounce) container Sour Cream
  • 3/4 pound VELVEETA 2% Milk Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
  • 1 onion chopped
  1. Heat oven to 350 degrees F. Slice potatoes in thin slices and cook potatoes in boiling water in large covered saucepan 10 to 12 minutes or just until potatoes are tender; drain. Remove 3/4 of the potatoes; place in large bowl. Add sour cream; stir until smooth. Stir in VELVEETA and onions. Add remaining potato slices; stir gently.
  2. Spoon into 13x9-inch baking dish sprayed with cooking spray
  3. Bake 30 minutes or until heated through.

Well tonights dinner is my son Trevor's favorites.  He usually has at least 2 helpings of it.  I made beef stroganoff, and its very easy and a quick weeknight meal.  Also, I just got my newest simple and delicious magazine today so get to try out some new recipes soon. 

Beef Stroganoff

1 lb. ground beef
1 pkg. egg noodles
1 can cream of mushroom soup
1 can sliced mushrooms, can use fresh if you prefer
1 C. sour cream
1 tsp. paprika
1/8 tsp. pepper
1 onion, chopped
1 clove garlic, minced


Boil egg noodles while browning up ground beef with onions and garlic.  Once browned, drain grease, and add back into the skillet.  Add, cream of mushroom soup, mushrooms, and sour cream and stir to combine.  Let simmer until every thing is hot and is creamy.  Serve with rolls, vegetable, and a salad if you would like.

Sorry, I didn't get a chance to post last night on what I made for dinner, so I will post it now.  It is as my kids and all my friends say one of my specialities.  I made Ribeyes and then Red Beans and Rice (out of a box can't find a good recipe for it yet YET).

Ribeyes

Marinade the steaks in your favorite bottled marinade or make your own.  I make my own alot, and its usually stuff that I think most people have on hand all the time.  I marinade my steaks for at least an hour in the fridge and then I let them get to room temperature before I grill them.  I cook them medium and after I grill them let them set for about 10 minutes to let the juices settle other wise if you slice into them hot off the grill you will lose all the juices out of the steak otherwise after the first bite they will be very tough and dry.

Well last night was the super bowl, so I had my friend over with her kid and we had a good time and a lot of finger foods and snack foods.  We had a creamy taco dip that was fabulous and lil smokies, and chips, and cheese and crackers.  The taco dip recipe is below and the lil smokies is very easy to make you just pour lil smokies in a pot on the stove and a bottle of bbq sauce and simmer it until its all warm and thats all there is too it.

Taco Dip

1 pkg. velvetta, cubed
1 lb ground beef
1 can rotel
1 pkg. taco seasoning
1 8 oz. container of sour cream

Cook the ground beef and drain grease off.  Put cooked ground beef and the remaining ingredients into a crock pot and let it cook on low heat until all the cheese is melted.

Well tonight for dinner I am making beef rolls with homemade cream/sweet corn. I will say that if you don't have a kind of biscuit mix wait to make it till you do.  I made homemade pizza dough for it since i was out of biscuit mix and we didn't like it as well. I haven't made this in a really long time so I decided it would be good to make tonight.  The kids love it, my kids like almost every thing that I make thankfully.

Beef Rolls
1 lb ground beef
1/2 C. chopped onion
1/4 C. ketchup
1 Tbl. worcestershire sauce
1/4 tsp pepper
2 C. biscuit mix
2/3 C. milk
2 Tbl. flour
2 C. hot water
2 beef boullion cubes
1/4 tsp salt
dash of pepper

Brown ground beef in a large skillet; add onions and cook until tender.  Stir in ketchup, worcestershire and pepper; set aside.  In a large bowl combine biscuit mix and milk; knead until smooth.  Roll dough out into a rectangle.  Spread meat mixture onto dough.  Roll up and pinch shut.  Put on ungreased cookie sheet and bake at 475 for 10 mins.  In pan used to cook beef, stir in 1 Tbl. flour.  Dissolve bouillon cubes in hot water and pour in pan; cooking stirring constantly, until thickened, to a gravy consistancy.  Pour gravy over beef rolls and serve immediately.

Homemade cream/sweet corn
1 pkg. frozen corn
1 pkg. cream cheese
1 stick margarine
1/4-1/2 C. sugar

Place corn in a microwave safe bowl and cover with plastic wrap and microwave for 10 mins.  While that is microwaving, in a small pot put cream cheese, margarine, and sugar on stove over med. low heat till melted. After corn is done add the cream cheese mixture into the corn and put back in microwave for 5-6 mins. Serve when done.  (Watch out for the steam when taking off plastic wrap)

Hmmm not sure what to make for dinner tonight.  Its too cold to think of anything to fix. Well I finally found something to make for dinner.  The kids absolutely loved it.  I found a new recipe for chicken nuggets with honey mustard sauce and then made some macaroni and cheese and we had corn.


Chicken Nuggets
2 C. crushed sour cream n onion chips
1 egg
2 Tbl milk
8 chicken breast tenders, cut in nugget sizes
1/3 C. butter melted
Honey mustard dipping sauce (recipe below)

In a seperate bowl combine egg and milk and beat til mixed good.  Dip chicken pieces in egg mixture then coat in the crushed up chips.  Place on a baking sheet and drizzle with melted butter and bake at 350 for 15-18 minutes.

Honey Mustard Sauce
3/4 C. mayonaise
3 Tbl honey
2 Tbl yellow mustard
1 Tbl lemon juice
Horsradish, to taste
2 Tbl. orange juice, or to taste

Combine all ingredients, except Orange Juice, stirring well.  After all is mixed, add orange juice till desired consistancy is reached.  ( I didn't add horsradish or orange juice and kids and I all loved it). 

I will definately make this again.  I think next time I will try maybe some BBQ Chips and see if we like it too.

First day of my new blog!!

Well its day one of my new blog.  I finally decided to get a blog going.  My friends keep asking me about my recipes and have wanted me to make a cookbook of all my recipes and that would literally takes forever to do, so I have decided to blog each day on what I am making for dinner and to provide the recipe of what I made.  I am going to try out new recipes and revise them as I want to for mine and my family's taste.  Hope everyone enjoys.  Okay so I have already made dinner for tonight and my kids love the stuff so I don't need to wait until they eat to post that we all like it.  I made BBQ meatballs, Brocolli, Rice, and Cheese Casserole, and homemade banana bread. 

BBQ Meatballs:
1 can evaporated milk
2 eggs
1/2 C. chopped onion
1/2 tsp Pepper
2 lbs. hamburger
2 C. quick oats
2 tsp salt
2 tsp chili powder
Mix all ingredients and make into walnut sized meatballs place them in a 9x13 pan.

Sauce:
2 C. ketchup
1 1/2 C. brown sugar
2 Tbl. liquid smoke
1/3 C. onion chopped
Pour over meatballs and bake at 350 degrees for 1 hour.

 Banana Bread:
1/2 C. shortning
1 C. sugar
2 eggs
3/4 C. mashed bananas (I used 3-4 bananas)
1 1/4 C. flour
3/4 tsp. baking soda
1/2 tsp. salt
Cream shortning and sugar until fluffy.  Add eggs one at a time, beating after each egg.  Stir in bananas, add dry ingredients and mix throughly.  Pour into a greased loaf pan.  Bake at 350 degrees for 45-55 mins.  That is how long it takes for my to finish, but I would start watching it at 35 mins or so until you have made it a few times.

Broccoli, Rice and Cheese Casserole (Green Rice)

1/2 C. chopped onion
2 Tbl. melted butter
2 C. Minute Rice
1 can cream of mushroom soup (or whatever you prefer)
1/2 C. milk
1 lb. velvetta cheese cubed
1 package frozen cut broccoli

Mix all ingredients together.  Put in a round casserole dish and bake at 350 for 35-40 mins or until all cheese is melted throughly.
